This Honey Fragrance red tea is surprisingly sweet! It was made by the same producer, Master Xie, using the same varietal Si Ji Chun, as the Honey Fragrance Oolong we offered this year. Master Xie is an Award winning, MOA organic certified, third Generation farmer in Ming Jian, Nantou, Taiwan.
In summer, the leaves are bug bitten by Jacobiasca Formosana, tea jassid or katydids, much like Oriental Beauty. When leaves are bug-bitten, saliva reacts with the compounds in the tea to start oxidation before the leaves are even plucked. Maybe if you have some of the Summer Mi Xian Oolong left you can try them side by side and see what the further oxydation brought out in the tea.
